Joe Sexton, a personal trainer from Laygate, is out to make that we can all enjoy ourselves this Shrove Tuesday.

The 26-year-old, who helps people trim down with his School of Weight Loss group, has whipped up a healthy recipe so even those wanting to stay in shape can make the most of the annual event.

Joe, a dad-of-one, said: “These are the perfect healthy alternative to your normal pancakes and are also wheat and gluten free, so perfect for people who are avoiding those things for diet or medical reasons.”

Joe is a healthy cooking fanatic and has racked up thousands of views online for his recipe videos.

He’s working on becoming an expert in the field and hopes one day to have his own cooking show.

Healthy pancake recipe:

Makes three small pancakes, serves one person

Ingredients:

1 full large banana

1 egg

A few raspberries, chopped into little circles

1 teaspoon of cinnamon

1 teaspoon of coconut oil

1 teaspoon of Greek yoghurt

1 teaspoon of honey

Method:

Step 1 – Blend the bananas, egg and cinnamon in a food processor or blender

Step 2 – Heat a little oil in a non-stick frying pan on medium heat. Pour a third of the mixture into the middle of the pan, spread a few little pieces of Raspberry into the mixture and wait until bubbles appear. Turn and cook for a minute or so on the other side until slightly brown. Repeat until mixture is gone.

Step 3 – Dollop on a spoon of Greek Yoghurt and drizzle with a little honey.

Best served hot.
