
They’re giving customers the chance to get a bite of the action with some special Derby Day sausages in the hope the Black Cats will taste victory once more.
Owner John Stirk is hoping his John O’Shea banger and Kami-Khazri spicy sausage will spur the team on to a beefy performance.
The meat treats are available all weekend at Stirks in Stockton Terrace, Grangetown, and at the family-run butchers’ branch in Sea Road.

Named in honour of the club’s Irish international John O’Shea, the Irish banger is made with Guinness and black pudding, while Tunisian midfielder Wahbi Khazri inspired the spicy version.
John said: “We created a Borini sausage, which is made from sundried tomatoes, mozzarella and basil, a while ago and it still sells now, so we thought we’d come up with some new versions for Derby Day. We sell a metric tonne a week of sausage, they do unbelievably well.
“We thought the Derby Day versions may add some interest. It means people can wake up on the day and tuck into a steak and Irish Banger sausage sandwich to get them in the mood.
“We also do Mannone meatballs, which do well. If we win, we have something up our sleeve to celebrate.”
Speaking of the Blacks Cats’ chances in the weekend’s clash, the businessman said: “I think we’ll win, we’ve got a better team than we’ve had in the past six wins and it’s one of the worst NUFC teams we’ve ever gone up against. But it’s Derby Day, anything can happen.”
